Items/ tools needed for grilling/ drying fish and snails.
Knife: This is needed for cutting your fish during the gutting process and at other times.
Toothpick/ Broom: This is needed to shape your fish into a circular form. This is done after the fish has been gutted and cleaned.
The tail of the fish will be inserted into the head part through the mouth or the head part while the toothpick or broom will be used to hold them together.
Salt: This is used for various purposes such as:
- Killing the fish.
- Brining purpose.
Bowls/ Buckets: These are needed during the process of killing, cleaning, brining, and collecting the Fish after drying in the Oven.
Seasoning: Any seasoning can be used. This is determined by the processor based on how he wants the fish or snails to taste and the seasoning available to him.
Lighter or matches: This is used to turn on the light to the heat source in the Oven. Items/ tools needed for grilling/ drying fish and snails.
Hand gloves: A pair of hand gloves is highly required because you will need to check the level of hardness/ dryness of the fish or snails at regular intervals.
Apron/ processing wear: This is useful for hygiene purposes to prevent the transfer of contamination from your clothes to the fish or snails. It will also prevent stains from the food from getting to your clothes.
Nose mask: This is needed to protect your Nose from inhaling or the effects of the heat from the Oven.

Eye protection: You can get a pair of protective glasses if possible. It is to protect your Eyes from the negative effects of heat.
